Another Practical Guide to Measuring Salt in Potato Chips with an Automatic Titrator...

Many food manufacturers still test salt content manually, so the idea of using an automatic titrator may seem intimidating. In practice, it is much simpler than you might expect. To make the process more approachable, we created a series of videos that explain the basic steps and introduce the equipment to anyone new to automatic titration.

While many capable titrators can perform this analysis, the most important consideration is not necessarily which model is best—it is the value of automating a test that is performed repeatedly throughout the day.

The following videos provide a step-by-step demonstration of how to prepare and test a potato chip sample using an automatic titrator equipped with a six-position sample changer.

Additional Materials and Equipment Needed

1. Silver nitrate solution at 1.0 N or 0.1 N concentration (used as the titrant)

2. Combined silver electrode (integrating silver and pH electrodes)

Key Consideration Before You Begin

1. Review your current sample-preparation process. It should generally remain unchanged, but proper sample preparation remains an important consideration.

2. Understand your sample’s composition. Familiarize yourself with the types of chlorides and sodium compounds it may contain.
